Simple Stovetop Oatmeal

I don’t know about you, but I don’t always have enough energy in the morning to make breakfast. I used to just have milk and cereal, but since David can only eat soft foods {and he’s dairy and gluten free}, that’s not an option for him. So I had to come up with some options other than just cereal, which is honestly probably a good thing 🙂

Let’s make breakfast for David!

He loves oatmeal with blueberries and we add tahini for some good fats and protein {and of course brown sugar makes it delicious!} I like to make a large portion and save the leftovers in the fridge for a whole week’s worth of breakfasts. That way, I can have my lazy mornings while still feeding David a breakfast of champions!

Ingredients:
Oats
Brown sugar
Blueberries
Cinnamon
Vanilla
Salt
Tahini
Honey
Almond milk

Simmer on the stove until the oats are mushy. You can eat it as is or blend it all together until smooth. I always purèe it for David.

Store the leftovers in airtight containers and keep in the fridge, and there you have it— breakfast for the week! How convenient is that?! It even tastes good straight from the fridge if you’re more of a cold breakfast person {think yummy smoothie!}
