Easy Instant Pot Italian Soup

I’m a huge believer in soup for ANY season! Corn chowder in the summer, butternut squash soup for fall, broccoli cheddar in winter. There’s no end to my love for soup!

You can use seasonal vegetables to make it extra fresh and healthy. Add your choice of protein and it’ll be so filling and warm. There’s an endless amount of ways you can create the perfect cup of soup.

I just love getting creative in the kitchen. Some people don’t think cooking is a creative task, but I completely disagree! You can go off a recipe, or make it your own by changing some of the ingredients. You can also completely wing it and come up with something new!

Like this easy instant pot Italian soup recipe I just made the other day. I made this up based on the ingredients I had in the kitchen, and it ended up being so tasty and versatile I wanted to share it.

You guys this is the easiest soup recipe and can be modified 1,000 ways. Just make sure you get enough spices and liquid and the rest can be switched up!

Here’s what I did for this recipe—
Easy Instant Pot Italian Soup

Ingredients
2 Tbls olive oil
2 cloves garlic chopped
1 medium onion
1 bell pepper
1 pkg cherry tomatoes
1 pound Italian sausage
1 yellow squash
1/2 C shredded carrots
1 jar Trader Joe’s bruschetta
Chicken stock
Salt and pepper to taste
Parmesan cheese

The ingredients are very flexible. I use whatever veggies I have on hand. Sauté veggies, brown sausage then add bruschetta and chicken stock. Set instant pot to manual for 15 minutes. Let simmer until you’re ready to eat! Sprinkle with Parmesan cheese.

Switch out sausage for ground beef and use a packet of taco seasoning for a Mexican soup. Go with chicken instead of sausage and add noodles for chicken noodle soup. There are so many ways you can change it up!
